Launched by Giusto Occhipinti (uncle to Arianna), COS adopted organic farming from the outset, biodynamics after that, and have only ever worked with native grapes. 40+ years later, COS remains a benchmark natural producer not just for Sicily, but for Italy as a whole. 

Today’s single-vineyard bottling is as structured, expressive, and rare as any red COS produces. It has the brightness of Beaujolais with the structure and savory intensity of Rhône syrah. Sicilian reds don’t get better than this.
